Pesce Al Cartoccio


1 3 to 4 pound whole fish; trout, mullet or bass
Salt to taste
Pepper to taste
3 tsps. Rosemary
2 cloves garlic, minced

Preheat oven to 375°.

Wash fish in salted water and pat dry inside and out with paper towels.

Sprinkle 12-inch sheet of aluminum foil with salt, pepper and 1 teaspoon rosemary. Place fish on foil. Put half the minced garlic plus 1 teaspoon rosemary leaves and salt and pepper in the cavity of the fish.

Season the outside of the fish with salt, pepper and remaining 1 teaspoon of rosemary and garlic.

Wrap the fish tightly in the aluminum foil. Put in a pan and bake for 20 minutes. Turn fish over and bake another 20 minutes. Remove from oven and let cool 10 to 15 minutes. Unwrap and serve immediately.

USE: 9 by 9-inch baking pan
YIELDS: 4 to 6 servings
