The Paste


A mixture of apples, nuts and wine which resembles the mortar and brick made by the Jews when they toiled for Pharaoh.

Preparation: Shell walnuts and peel apples and chop finely. Mix together and add a small amount of wine.

Role in the Seder: This is used as a type of relish into which the maror is dipped (and then shaken off) before eating.

Haleq
Iraqi Jews make a very special charoset, it is made from dates, indirectly - dates are washed and then soaked overnight and then this mash is boiled once and then strained through a new clean cloth once all the liquid is collected the mash is discarded and the liquid is boiled down until it form a thick syrup. Nothing is added until it is mixed with ground or finely chopped walnuts. The date syrup is called silan and is then know as haleq when mixed with the walnuts. The flavour when eaten with any matzah but especially shumurah matzah is something that even the child look forward to every year. This recipe was given to me by my husband's grandmother and I make every year for the family.

Recipe
Different communities have different customs and use various ingredients to create the charoset paste, some include dates or prunes. If you do a web search for 'charoset' you should find some great ideas.

The Paste
Seems I've had this with dates and other ingredients, but I'm not Jewish. Are there other allowable ingredients that can be included in the recipe?

Nut Allergies
My wife is alregic to tree nuts what could we use/ do as a sutable substitute?
