Sweet Potato Pie


3 large sweet potatoes
1/4 to 1/2 cup orange juice
2 eggs, beaten
Dash of salt
Chicken fat or oil

Use chicken fat or oil to grease pie dish.

Peel, boil and mash sweet potatoes. Mix with rest of ingredients and bake in greased pie dish at 350 for 45 minutes or until lightly browned. Serves 4.

Not a great alternative without a crust. I use the same recipe for filling but pecans and walnuts coated with brown sugar for the crust. Very delicious that way.

Sweet Potato Pie
I have a recipe for sweet potato pie from my grandmother, I don't think hers is as healthy as this one but it sure does taste good:)!

This sweet potatoe pie has been the favorite side dish for my family for many years. They even request it during the year, but I want to keep it special for passover. It is tasty and healthy.

Coming from a kosher home where everyone has passed away, this helped me remember the receipes I thought I forgot. Gonna do a real sedar plate for the grandchildren this year.
