Sweet Beet Relish


2 pounds beets
3 cups sugar
3/4 cup water
1 lemon, peeled
1/2 cup chopped walnuts

Peel beets and boil until soft. Dice finely. In 3quart saucepan, mix sugar and water and boil until sugar dissolves. Add beets and cook over medium flame in covered pot, stirring occasionally.

Add peeled, sliced lemon and boil for another hour or until beets are transparent. Add nuts (cinnamon can be added if desired) and cook for another 15 minutes, stirring occasionally.
