Potato Kugel


10 large potatoes
1 carrot
1 onion
5 eggs, beaten
3/4 - 1 teaspoon salt

Peel all vegetables and shred in food processor or hand grate. Mix in eggs and salt. Pour into greased 'wonder baker' or tube pan or 9 by 13 and cook over low flame for 1 1/2 to 2 hours or until brown and crispy.

an answer to Ellen, when you add matzo meal to a kugel that is another recipe, it is not the same flavors and textures, it should not have meat bones, it is just a real potato kugel, and the one I send, it is called a reijbah is it the way we call it here in Mexico it should be very sticky. loose and very juicy, if you add matze meal it will get dry like a cake.

Addition to Kugel
I add matzo meal to this same dish. I can't tell you exactly how much because my Grandmother taught me how to measure with my hand, I guess it would be 2 or 3 handfuls depending on how many potatoes you are using.

Does one cook the kugel on top of the stove/gas burnner, or can one cook in the oven @ "x"degrees???

A wonder baker is an old type of pan/oven substitute. You can use a tube pan or any other regular pan.

delicious potato kugle
that potato kugle some flavor is missing,for the same recipe i would add some pepper to taste and i cook some meat bones (like a knee) in small pieces, just for 10 min then drain it,(this is just to take out the blood) throw away the water and put the bones inside the kugle, i also brown 1/4 of an onion in 1/2 cup shmaltz or oil an mixed all together.let slow cook for 5 hours.
