Baked Chicken With Honey Soy-Sauce


2 3-pound chickens, quartered
1/3 cup honey
3 Tbsps. prepared mustard
3 Tbsps. soy sauce

.

Rinse chickens, remove excess fat and pat dry. Place chickens in a large roasting pan.

Combine all ingredients in a cup and brush chicken quarters. Bake uncovered for 1 ¼ to 1 ½ hours.

USE: 1 large roasting pan
YIELDS: 8 servings

If you're baking cut up chicken parts for 1-1/4 to 1-1/2 hours, 350 F is satisfactory. The skin will be well glazed, and the flesh quite tender. At 400F, Chani you'ld char the skin before cooking the chicken. If your goal is to have tender, adequately cooked chicken, you must be patient. Professionals roast turkey at 325F, I think this poor chicken is doing well at 350F for a lovely & satisfying Shabbos meal!!

I made a half-recipe of Baked Chicken with honey soy sauce tonight and baked it for an hour at 350. The skin browned and was too tough to eat, but the chicken thighs were very juicy.
